
While of most bartenders at any age are more inclined to immerse themselves in knowledge and tasting of whisky, rum or tequila, there is someone who just loves his fortified wines. Nate goes home at the end of the evening and knocks back a few Noilly Prat or Lillet Blanc, something that I wish to this day I had the palate for. Don’t get me wrong, I love a little Lillet (Simon at Veneto can testify to that) along with the crew but it wouldn’t be my first choice for an afterwork bevvie.
Nate’s palate is very balanced when it comes to fortified wine cocktails, as his Jerez Rose can attest. The Grim Rose is the final in his series of Rose twists. Dubonnet is underrated, especially in Victoria where it is associated with old woman eating scones. Nate’s twists showcases the complexities and the depth of Dubonnet as a mixer.
